Harvested daily from the waters of Nantucket Harbor, we serve Fifth Bend Oysters farmed by Simon Edwardes.

In the world of wine, the word terroir refers the environment in which the wine is produced and how it imparts on the taste and flavor of the wine. Well, in the oyster world, there is the concept of merroir: how the growing environment of oysters affects their taste.

Fifth Bend Oysters are grown across ten acres in Nantucket Harbor with a mix of floating cages in deeper water and bottom cages in intertidal zones. The diversity in environments during the growth cycle of the oysters means that Fifth Bend Oysters are balanced, bright, and briny!

Farmed by Simon Edwardes

Born in Kenya and educated in the UK, Simon found his way to Nantucket in 2004. After a few years of landscaping, he decided to revive his Masters Degree in Aquaculture and founded Fifth Bend Oysters in 2008.

Now 16 years later, Fifth Bend Oysters has turned into a full family business. Most days you can find Simon’s sons, Hawkin and Soren, working the farm alongside him. And this year, they are bringing the oysters directly to you with Shells Angels Raw Bar.
